Advice needed on Asia overland travel and meeting visa requirements for onward journey

Hi,

I am an Australian citizen planning a trip to Japan, Korea, China,
Taiwan, Vietnam, Cambodia, Loas, Thailand in roughly that order.

As I am planning to avoid air travel once I am in Tokyo I am hoping to
hear from other travellers how they meet the common entry requirement of
having an onward ticket for places like China.

Would I need to book my train/ferry tickets in advance of leaving home?
Or would a ticket back to Sydney from Thailand be sufficient indication
for Chinese immigration that I was intending to leave?

Any tips welcome!

Some countries let you show a bank statement as proof that you have
sufficient funds to buy a ticket out.
