While researching "small" ship cruises--I don't find "conventional"
cruising very relaxing: too many people, too much noise, too much, too
much--I came across Sea Dream Yachts(http://www.seadreamyachtclub.com/).

Anyone ever sailed on them?

Yes there are folks on r.t.cruises including myself who have sailed on
these ships. Please do not hesitate to ask specific questions and,
hopefully, you will get appropriate answers.

I've never heard of them. If it turns out that your 'Dream Yacht' is
helmed by Capt. Ron, do not go! If already on board and at sea, do not
return to the ship at very next port. You will find yourself happier
this way.
