Hi bleufish -
I'll assume you're talking about the coast. I haven't visited inland and if
that is your destination, then please ignore this post. In fact, I only
have experienced Placencia, but from what I have read, other watery
locations in Belize are similar.
At Placencia, the beach was pleasant and had some nice sand, but the
drop-off was steep. I think you'd have to hold your baby all the time you
are in the water. The coral reefs can only be reached by boat. So to
snorkel (again, I'm assuming) you might have to take turns with your
husband, with the baby and one parent stuck on the beach. Might be worth
it, if you want a really exciting place to snorkel.
If it were me, I'd consider Isla Mujeres, because there is a very shallow,
gentle beach there, as well as snorkeling from the shore (tho the reef's
better off Belize).

I guess that depends on whether you want to go for a relaxing vacation or if
you want to have life as usual in a tropical setting.

Belize is a wonderful country, we were there last year and enjoyed it very
much.
They have 2 very popular irelands, namely caye ambergris and caye calker.
There are a lot of foreign tourists there so i would not see a problem about
security there.
The hygeine is also pretty good, and you will have such a good time. I would
skip Belize city,
which is a quite dangerous city, although lonely planet tells you otherwise.
